This is one of my favorite appetizers. Artichokes are great when steamed and then grilled. They have an amazing flavor by themselves and are even better when finished on a grill. One time when I was preparing to grill some artichokes I had the great idea to use the artichoke itself as a bowl for the dip. The dip has just a touch of heat from the pepper flakes which plays well with the smoke flavor from the grill. I normally cook this indirectly on my Primo. The below recipe makes 2 artichokes stuffed with dip which is enough for…
These bacon-wrapped olives are a great last minute appetizer. I call them “Greek Poppers”. They can be cooked at about any temperature. Throw it on during the last leg of cooking your ribs or grill them right along your steak. They crisp up great and make an amazing appetizer. The olives used for this are double-stuffed mammoth-sized olives. Each one has a sliver of garlic and jalapeno. Amazing flavor and a great treat to make. 2 dozen Tassos Double-stuffed Olives (buy at Costco or Amazon) 1 cup brown sugar 2 tbsp black pepper 1 tsp ground ginger 1 pkg bacon…
A few months ago I showed you a recipe for how to make bacon. It was from a relatively new buddy of mine Bruce Aidells. He’s got a great new cookbook called The Great Meat Cookbook. If you could only buy one cookbook this ought to be on your short list. Once I got this book from Bruce I knew I had two problems. I was hooked and I was stuck. I don’t review just any cookbook. It has to be one that I truly enjoy. One that I would recommend you go pay your hard-earned money on. One that…
Pulled pork is classic barbecue fair. It is one of the things you will want to learn to cook and cook well. It is a cheap cut, it can feed a large crowd and if done right it will make your mouth water between bites. Barbecuing Boston Butts (a.k.a. Shoulder Blade Roasts) is something your smoker was just born to do. It can turn that cheap cut into a sultry, smoky roast that just falls apart. This recipe was something I originally created for Primo Grills and it has quickly turned into one of my favorites. It’s simple. It’s foolproof.…
The Porcini mushroom is commonly regarded as one of the most flavorful and versatile of fungi for cooking. In my opinion the flavor is unparalleled and I consider it to be a gourmet mushroom. Although you can readily find workable substitutes to use for most recipes, I do think it’s worth taking the time to find porcinis. They’ll come in small plastic jars and containers like the image here. If you’re worried about what to do with dried mushrooms don’t. Since they’re dried they last quite a long time and are a great thing to keep on-hand in your pantry.…
This recipe is as classy and impressive as the Prime Rib and Rack of Lamb, yet as easy as any weekday dinner. So if you’re looking to impress there’s not much that can compare to a beautifully cooked, whole Cornish Game Hen showcased on a plate. You can also serve just half if you have plenty of sides and a larger group to feed. This is a recipe I wrote for Primo Grills last year. We enjoyed it right alongside my Prime Rib at Christmastime. When I came up with this recipe I was looking for a great way to…
This is a spice rub that I originally created for my Cornish Game Hen recipe, but it is a great dry rub for any barbecued chicken. I jokingly call this the Bye-Bye Birdie Rub, because it’s the best send-off you can give for any barbecued bird! Recipe Yield: Approximately 1/3 cup Prep time: 10 minutes Ingredients 3 tbsp brown sugar 1 tbsp kosher salt 1 tbsp black pepper 1 tsp garlic powder 2 tsp onion powder 1/2 tsp chili powder 1/2 tsp paprika 1 bay leaf, crushed 1 tsp thyme Directions Use this rub on any chicken, Cornish game hen…
