One of the things I love about Fall is that I can start finding turkey wings at the grocery store again.  I flat out LOVE turkey wings and, for the life of me, can’t figure out why they are not available all year long.

Today I want to share a really simple, but incredibly delicious, way of cooking grilled turkey wings!  By the way, a lot of folks call these “pterodactyl wings” because they are so MASSIVE so you can use that name to impress your kids 🙂

    Let’s get started!

Prepare the Turkey Wings for the Grill

I picked up a two pack of turkey wings with each wing weighing in at a little over two pounds.

Go ahead and give the wings a rinse under cold water and then pat dry with paper towels.

Once the wings have been rinsed and dried season them liberally with the following dry rub

    • 2 tbls salt
    • 1 tbls black pepper
    • 1 tsp onion powder
    • 1 tsp garlic powder
    • 1 tsp dried Italian herbs

Let the dry rub sit on the wings at room temperature for 30 minutes while your pellet grill gets to temperature.

Grill the Turkey Wings at 350F

Turn on your pellet grill and set the temperature to 350F.

I was burning wood pellets made from a hickory blend but if you like a lighter smoke flavor you could use apple or maple.

Put the seasoned wings on the grill and let cook for 90 minutes.

You want to cook the wings until the skin is crispy and the meat reaches an internal temperature of around 185F.  The wings are “safe to eat” at an internal temperature of 165F but taste so much better when taken to a higher internal temperature.

Sauce and Serve the Grilled Turkey Wings

Any sauce that works for chicken wings also works for turkey wings. I prefer to add the sauce when the wings are done cooking but you can also add it during the cooking process like my buddy did for these Teriyaki Turkey Wings.

The sauce I am playing with these days is made from:

    • 1 cup Frank’s Hot Sauce
    • 1/4 cup peach nectar
    • 2 tbls melted butter
    • 2 tbls honey

I like to drizzle the sauce over the wings but you could also toss to coat more thoroughly.
