Ingredients
- Pork Belly
- Smoke ‘n Magic Pork Rub
- ½ cup Sugar in the raw
- 1 can pineapple chunks-drained
- 3-4 fresh jalapeños-sliced (as desired they will not add a ton of spice once cooked)
- ½ cup Smoke ‘n Magic Spicy BBQ Sauce
- Pico de gallo (as desired)
- Cotija cheese (as desired)
- White Corn tortillas
Directions
- Liberally rub the Smoke ‘N magic Pork Rub onto the Pork Belly
- Cook at 275 for 3 hours either on a rack on directly on the grate
- Wrap pork belly in foil with Sugar in the Raw, canned pineapple chunks, fresh jalapeños, and Smoke ‘n Magic Spicy BBQ Sauce-place back on the smoker until internal temperature of 212.
- Cube-up pork belly
- Prepare tacos: 4 white corn tortillas-add pork belly, pico, cojita cheese, some jalapeño, and pineapple from the wrap
