By now we all know that I love using the smoker to make just about anything. It can be a side dish like Smoked Corn on the Cob or it can be a big slap of meat like Smoked Pork Belly. It just gives so much great flavor to anything. And meat gets so tender and juicy, you really can’t beat it!
And throwing a steak on the smoker is no exception! You will be so surprised by how juicy the steak gets and how much flavor it takes on. Just a little bit of salt and pepper goes a long way.

Can You Smoke Steak
Absolutely! Steak is a great cut of meat that you can cook on the smoker. It takes on such great flavor from the smoke and makes it completely different that the Sous Vide Steak or grilled steak you are used to. It is great to lightly season the steak and then try different pellets or wood chips to come up with whatever your favorite flavor is.
Best Steak For Smoking
I think the best steaks for smoking are ones that are at least 1 1/2 inches thick, closer to 2 inches. Something like a Ribeye, New York Strip, or a Filet. This method will work for pretty much any thick cut steak. You just want to avoid flank steak or a skirt steak, those are too thin and will cook too quickly with this technique.
Just like when you smoke most things, low and slow is the name of the game. You will get a super juicy steak using the smoker. And it will have so much flavor, you won’t need to cover up the steak with spices. Just a little salt and pepper is all you need to have one of the best steaks ever.
How To Smoke A Steak
- Preheat smoker to 225º F.
- Season steak on all sides with kosher salt and black pepper.
- Place on smoker and cook for about an hour, until you reach your desired internal temperature. You want to cook to 5º F less your final desired temperature.
- Heat a large skillet over high heat, adding a high heat oil until it is shimmering and hot. Add steak and cook for 1 minute per side.
- Remove steaks from the pan and let rest for 5 minutes before serving.
How Long To Smoke Steak
It takes about an hour to smoke steaks. It will really depend on how thick your steaks are and how well your smoker holds the temperature. The best way to know when the steaks are done is to use a thermometer. Testing the internal temperature is the most accurate. You want to go for 5 degrees under your desired temperature, because you will sear them after they are done to give it that nice crust steak is known for.
Rare – 120º F
Medium Rare – 125º F
Medium – 130º F
Medium Well – 135º F
Well – 140º F
I use the Thermapen Mk4 to check the temperature of the meat throughout the cooking process. It is the most accurate thermometer I have found and have been using it for years!
Searing Steaks
Searing the steaks are optional, but I think it gives them the flavor and crust that you are used to. There are a couple options of using your outdoor grill or a skillet.
Grill – Heat grill to 450º F before putting the steaks on the grill. Sear for about 1 minute per side. Let rest for 5 minutes before serving.
Stove – Heat a large skillet over high heat. Add a high heat oil (like avocado or vegetable oil). Once the oil is shimmering add steak and cook for 1 minute per side. Remove from the pan and let rest for 5 minutes before serving.
